Easy Potato Pancake Recipe

This is one of my favourite meals. You can change the toppings to use you too. I am sharing her as when I shared the photos on Instagram a few followers, DM me for the recipe so here it is.

Potato Pancake

1 large organic potato or two medium sized potatoes.

1 Avocado

1 Lemon or lime

1 cup of frozen petit pots

Thyme or herb of your choice.

  1. Wash the potatoes.

  2. Grate the potatoes. This is really quick in a food processor.

  3. Rinse the and wash the grated potato.

  4. Squeeze and drain the water from the potatoes.

  5. Spread the grated washed dried potato on to a non-stick pan, and pat it down so what it forms a nice pancake shape.

  6. Cook on oneside for 10-12 minutes.

  7. Using a plastic spatula, ease away the corners and flip it over, and cook on the other side for another 10-12 minutes.

  8. While the potato pancake is cooking pour boiling water into the mug of frozen petit pois so that they defrost.

  9. Squeeze the juice of the lemon, add the avocado to it. Mash and mix. Sprinkle in the herbs of your choice I like thyme or coriander..

  10. Drain the petit pois.

  11. Once the potato pancake is cooked, spread the mashed avocado mixed with lemon juice, over the pancake, so it it covers it evenly. Then top with the petit pois.

No oil. No salt. No sugar.
